Consider any place where contamination or unsafe conditions may can be found to cause health hazards associated with the food being served. Design the kitchen to avoid places where food reaches the incorrect heat range or at risk for cross‐contamination. Make the loading dock entry as near the walk‐in cooler as is feasible, for example, and design a specific path to other safe‐keeping areas to avoid the food from coming into contact with anything unnecessarily.
Research appliances. Small appliances are becoming more common and much better to find. Look for appliances that double duty, such as a kitchen sink included in a compost dishwasher or bin or a stove with space for storage.
